Ingredients

1¼ cups oat & barley flour blend

½ cup oat bran

¼ cup ground linseed

¼ cup raisins or chopped dates

1 cup grated pumpkin, butternut squash or finely grated carrot

2 Tbsp sugar – omit if using vanilla soy milk

2 Tbsp canola oil

2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

½ tsp nutmeg

½ tsp ground ginger

1½ cups soy milk

1 egg

No-stick spray

Method

1. Combine all ingredients (except No-stick spray). Mix well

2. Heat skillet over medium heat. Coat lightly with No-stick spray

3. Pour or scoop batter into pan, using about ⅓ cup batter for each pancake. Brown on both sides

4. Recoat skillet with No-stick spray as necessary. Serve pancakes hot with syrup and Flora pro-activ if desired.

Makes 12 pancakes.
