Ingredients
8 oz skinless chicken breast, cut into cubes or sliced thinly
2 Tbsp salt free Bajan seasoning (see Quick Tip p.19)
1 medium onion, sliced
2⁄3 cup diagonally sliced celery
1 cup diagonally sliced carrots
1 cup diagonally sliced string beans
1 cup sliced red sweet pepper
3 garlic cloves, finely minced
2 Tbsp fresh grated ginger
1 Tbsp each, marjoram and thyme
2 small packs chow mein noodles
No-stick spray
Method
- Mix chicken pieces with Bajan seasoning.
- Spray saucepan with no-stick spray. Add chicken pieces and cook on a medium heat.
Stir occasionally until chicken is slightly browned. - Add the onion, celery, carrots, string beans, sweet pepper, garlic, ginger, marjoram
and thyme and continue cooking until vegetables are tender - Cook chow mein in boiling water until just tender. Drain. Add chicken and vegetables.
Stir. Makes 4 servings.
