Ingredients
8 oz skinless chicken breast, cut into cubes or sliced thinly
2 Tbsp salt free Bajan seasoning (see Quick Tip p.19)
1 medium onion, sliced
2⁄3 cup diagonally sliced celery
1 cup diagonally sliced carrots
1 cup diagonally sliced string beans
1 cup sliced red sweet pepper
3 garlic cloves, finely minced
2 Tbsp fresh grated ginger
1 Tbsp each, marjoram and thyme
2 small packs chow mein noodles
No-stick spray

Method

  1. Mix chicken pieces with Bajan seasoning.
  2. Spray saucepan with no-stick spray. Add chicken pieces and cook on a medium heat.
    Stir occasionally until chicken is slightly browned.
  3. Add the onion, celery, carrots, string beans, sweet pepper, garlic, ginger, marjoram
    and thyme and continue cooking until vegetables are tender
  4. Cook chow mein in boiling water until just tender. Drain. Add chicken and vegetables.
    Stir. Makes 4 servings.
